Thailand, this rice is different to Indian Basmati or American Long Grain,
and is really a very important part of creating an Authentic Thai Dish
Instead of saying "Hi there" or "Where are you going", when talking to friends and family, Thais will ask "Kin khao mai" which translates as "have you eaten rice?"
Being the essential part of the Thai diet, and something nearly every Thai will eat several times a day, Thais have become true connoisseurs of rice. Thai rice is considered by many, to be the best in the world.
- Of course the key ingredient to in all curries are the Herbs
and Spices, Thai Kits
come with our specially selected Curry Paste, where the ingredients
have been pounded and mixed
in the correct quantity. Purists may say you should buy all the
components of the curry paste, pound them using a pestle and mortar,
and blend them yourself. However, we've found, even after all this work, the
taste is rarely better than a top quality pre-made curry paste. In fact,
many Thais buy pre-made curry pastes, and if you take a walk in any
Thai market, you will see the distinctive stalls, with their different
coloured pastes, piled high. Our pastes are supplied packed in a protective pouch and
will last several few months in your cupboard, giving you the freedom to either, quickly
'knock together'
a delicious tasting Thai meal in little time with
minimal effort, or, take your time, and by adding some top quality
uncooked Tiger Prawns or your favourite meat, and your own selection
of vegetables you can make a beautiful and delicious meal for that special
occasion.
- Essential to almost all Thai cooking is Fish Sauce,
Thai Fish Sauce is supplied with your kit. This thin salty
liquid is used by the Thais instead of salt, and adds
a distinctive characteristic to all our Thai dishes.
- Coconut Milk, this is not the water you find inside coconuts, but a thick milk made be compressing the flesh inside. Firstly the inside is scraped out
using a scraper called a 'kratai', this white 'meat' of the
coconut is then squeezed and sieved through a cloth to produce the coconut milk.
- Chilli, Some like it hot, and of course, some don't, so in addition to spices
in our curry paste we also provide a sachet of Chilli, (We roast and
grind this ourselves to ensure a full flavour), so you can adjust the spicyness to suit your own taste.
- MSG, Most Thais put MSG (Monosodium glutamate) in their
food, but we know
some people don't like to use it, so we put ours in a separate sachet. Have a look at wikipedia
for more information, MSG adds what has been called the the 5th
flavour or Umami to your food. (the other flavours being sweet,
sour, salt & bitter). In itself, its actually quite tasteless, thought of as a flavour enhancer or something that "opens up" your taste buds. Adding MSG to your curry is entirely your choice.
